Parmesan Hash Brown Cups & other muffin pan recipes:  1 package simply potatoes, 1/2 C parm cheese, 3 green onions, 2 TB olive oil, 1 tsp salt, 1/2 tsp pepper. Mix, put into greased muffin pans, smoosh down w back of spoon, bake at 350 degrees for 1 hr. on bottom oven rack
