    Mexican Stuffed Shells: (with some variations) bite size chicken pieces/ brick cream cheese/ orange pepper pieces/ green onion slices/ shredded cheddar, picante sauce/ taco seasoning all cooked in pan then used that mixture to fill the shells that I had laying in baking dish of enchilada sauce/ sour cream then topped all the shells with more shredded cheddar and tomato pieces as well as green pepper.

Dinner 11/15/11 with leftovers to enjoy later--Taco Pasta-- "Healthified" it with whole wheat pasta, light cream cheese and sour cream, and extra lean ground beef... :)

taco pasta--made this tonight, and it's actually very good. Even Lee liked it. Needs more sauce though--so I increased the salsa, sour cream, and cream cheese a little bit.

Taco Pasta | Plain Chicken.....I love quick and easy weeknight meals and this recipe fit both of those criteria. We loved this pasta dish. I had to make myself not go back for seconds.

    O. M. G. This was awesome! Next time I'd add more corn and tomato, only bc of my love of them! I also topped with cheese to serve...Too delicious!
