Cranberry Pecan Chicken Salad. A fairly healthy, but decadent tasting chicken salad recipe. I figured calories for the whole bowlful at about 950 - a lot, but it makes over 3 cups. I took about 1/3 of it and had it over a bed of lettuce. Delicious and different and a filling dinner at under 400 calories. Glad I have 2 more servings to eat!
Cranberry Pecan Chicken Salad- 2 chicken breasts, 1/4 cup pecan(toasted and roughly chopped), 1/3 cup granny apple(diced into small chunks), 1/2 cup dried cranberries(roughly chopped), 1.5 tablespoons shallot(minced), 1/3 cup Greek yogurt, 2 tablespoons apple cider vinegar, 1 tablespoon rosemary(minced)
