Baked Oatmeal: 2 eggs.1 tsp vanilla extract.2 c applesauce unsweetened.1 mashed banana.½ c honey.5 c rolled oats.¼ c flaxseed meal.1 TBSP ground cinnamon.3 tsp baking powder.1 tsp salt.2¾ c milk.Opt: raisins,walnuts,choco chips.Preheat oven 350. Mix eggs,vanilla,applesauce,banana & honey. Add oats,flax,cinnamon,baking powder,salt.Mix well.Combine milk. Prep muffin tin(s) with spray or liners/Makes 18.Pour into pans.Add toppings/put fruit in batter.Bake 30 min.Clean toothpick.Can  freeze.
