Asparagus Quinoa Risotto//just made this tonight, Ryan and I both enjoyed this-a healthier version of our usual risotto. I mainly stuck to the recipe, but I'm 50% Italian so i didn't have the heart to sub wine for 2 cups water + lemon juice, so I used a dry white wine. And, then I also added a little more liquid and stirred to absorb to get more of a risotto texture, I did 2 cups broth, 1/2 cup wine, 1/2 cup broth, 1/3 cup wine.
