Coconut Date Cookies. These cookies were a huge hit...if you like dates. Unfortunately for me, I did not realize I didn't like dates until I made these. They were good but...they definitely tasted like dates. I found they were naturally very sweet and it was not necessary to add as much sugar as the recipe calls for. The only other problem is that they have a very sticky texture and don't retain their shape very well, even after cooking.

Raw Coconut Cookies. Even my co-workers that don't like coconut enjoyed these. The only negative comment is that they are difficult to stick together. I found myself adding more honey to facilitate this. It is true that coconut butter hardens when placed in the freezer but I did not find that placing these cookies in the freezer for 30 minutes made them much easier to roll into a ball. I also added more than a pinch of salt...delicious and relatively healthy!

Flourless Chocolate Peanut Butter Chocolate Chip Cookies. There is no excuse why you should not make these cookies. Simple and delicious. I used super chunky peanut butter and added some crushed peanuts to highlight their awesomeness.
