Um yum....... I may never eat anything else for breakfast again. Pumpkin Muffins - only 2 ingredients. That's right, just the cake mix and the pumpkin. No oil, no eggs, no water, nothing else. Bake at 350 degrees for 20-25 minutes. Add a dusting of powdered sugar, or better yet some homemade cream cheese frosting for added awesomeness. This is a Weight Watchers treat, very low cal. Sub spice cake mix too.

blueberry + chocolate cupcakes: blueberries, chocolate, ganache, and a sprinkling of unicorn dust, I'm sure. I made these years ago for a friend's birthday. They looked lovely, and they're so... fresh looking even though it's chocolate, which doesn't exactly scream fresh to me.

There's only two ingredients. That's right, just the cake mix and the pumpkin (15 oz.). No oil, no eggs, no water, nothing else. The end result is an amazing, incredibly moist muffin/cupcake with a hint of pumpkin flavor.

mix your 15 oz. can of pumpkin puree with one box cake mix (ignore any ingredients the cake mix calls for) with an electric mixer until you have a well-blended batter. Bake at 350 degrees for 20 - 25 minutes (may vary with different cake mixes)
