chicken enchilada casserole - made March 2013 (used ground beef vs chicken, Relish That Corn vs frozen corn, added Spanish rice and black olives, forgot cream of chicken and sour cream layer). Mild enchilada sauce is too hot, try something else next time.
love this Mexican Chicken Cassarole. zesty, creamy and loaded with Chicken! Oh, and did I mention that it's from Cooking LIGHT?------i don't care much for the "Light" part.i just love anything Mexican.
