    Silky Smooth Pumpkin Pie via smittenkitchen | use fresh pumpkin and subbed in coconut milk for the cream which probably made a difference too. Only complications: the straining took a LOT of work and time, and somehow I ended up with enough strained filling for two pies (so maybe I should have cooked it longer on the stove?).
