Cookies 'n Cream Cupcakes - eta: made these, they are so, so good! After tasting the batter I omitted the cookies in the cupcake and I'm glad I left them out. The icing is very sweet but very good. The cake is stable, not too sweet, and can hold the weight of the icing. I got 12 large cupcakes, would def double next time. I have icing leftover but I don't have a piping bag so didn't use as much. Def a keeper, you should make these!! JMc
Almond Wedding Cake Cupcakes with Raspberry Filling - Judith's comments: this recipe for the frosting is the absolute best frosting I have prepared in the last 50 years! you MUST follow the whipping directions exactly. Baked a pound cake cut into 3 layers filled w/ raspberry filling and topped with this frosting ...decorated w. fresh raspberries delicious.
