Super Yum for breakfast!  I subbed honey for the granulated sugar, applesauce for the oil, and pumpkin pie spice for the ginger/nutmeg.  Mostly healthy and something different for breakfast.  I suggest you make them pretty small.  Mine ended up as giant cookie sandwiches!
