Paleo Mug Cake - 1 small ripe banana, 1 1/2 Tbs almond butter (or any nut butter), 1 egg, 2 heaping Tbs cocoa powder, 2 tsp sweetener (optional), Chocolate chips, nuts, dried fruit, etc. (optional). Mash banana until smooth, add nutbutter, egg, sweetener, mix til smooth, pour into microwave safe container (2/3 full), micrwave in high 2 1/2 min. or until center is set, eat hot or cold.

The best Paleo/Gluten Free pancakes I've ever found and it's 4 ingredients, to boot! I add 1/4 tsp salt (because pancakes should be a hint salty) and 1 tbs chopped walnuts/pecans for a little crunch. The texture is spot on. I've even made these with crunchy PB and they're almost even better.
