Greek Marinated Chicken-Yummy! Had it for dinner, then cut it up and put the leftovers on my lunch salad. Just as good cold! I will add a little less lemon next time. This one is definitely going in the rotation!

Maybe it's from my time living in Sweden w/ the heavy use of dill weed, but I loved that fresh element in this salad...only 1 tbs of Veganaise was needed for 4 servings worth of potatoes. I eliminated nutritional yeast.

simple chickpea curry: bell pepper, carrots, can of drained chickpeas, cup of plain yogurt, add curry powder and garlic powder, cook well, serve on brown rice.
