Homemade Salsa 8 C tomatoes, peeled, chopped, drained 2.5 C onions, chopped 1.5 C green peppers 1 C jalapeno pepper, chopped 6 garlic cloves, minced 2 tsp cumin 2 tsp pepper 1/8 C canning salt 1/3 C sugar 1/3 C vinegar 1/3 C chopped Italian parsley or Cilantro if you prefer* :) 15 oz tomato sauce 12 oz tomato paste Mix everything. Boil 10 min. Seal jars & cook in hot water bath 10 min. Yields 3 quarts. Add 2 T freshly squeezed lime juice, salt, pepper to taste, let set. Salsa Verde: This is pretty good. It made a LOT of salsa. I would probably use a few less tomatillos next time because the tomatillo flavor is really strong. And I would add in green chiles (They're my fav and I AM in New Mexico). Overall, it's a good recipe.
A pinner says: Stopped buying the jar stuff once I tasted this homemade salsa. Simple and delicious: Chop 5-6 Roma tomatoes,1 small onion and 1/2 cup fresh Cilantro. Mince 2 seeded Serrano or Jalapeño peppers and 1 clove of garlic. Add 2 tbsp. freshly squeezed lime juice and salt and peper to taste. Mix everything together and let sit overnight for flavors to meld.
