sun dried tomato & mushroom pasta in a garlic basil sauce (omit the cheese and cream for vegan). saute in the sundried tomato olive oil, add kale, a little white wine, and add sour cream (or dairyfree sour cream) at end for a stroganoff sauce...this was great!
