Skinny Fish & Chips - We have been making ours this way for years and it's always delicious. TIP: I crush the chips in a Ziplock bag, until they are a much finer crumb than shown here. And I don't worry about the cooling rack until they get out of the oven. I just flip them over halfway through cooking.
