Zucchini Fritters with Tzatziki - Not a pancake — I wasn’t looking to make a floury, bread-crumb bound, cheese-laden pancake. I wanted something resembling a latke but composed of zucchini, which would be crisped quickly in a pan and served with something cool like sour cream or tzatziki.
Paleo Pound Cake- Made this yesterday and it was surprising Yummy! A sweet treat I can have without all the guilt. Note: I did also add tsp coconut extract and in my oven is was done in 45 minutes. I would suggest to start checking it around 40 minutes.
