Here is a modified version for one person with total WEIGHT WATCHER POINTS of 7. 1/4c roasted sweet Potato (1pt); 1/2 cup quinoa (3pt); 1and 1/2 tbsp dried cherries or cranberries (1pt): 1pt; 1/4c sweet potato (1 pt); 1 tbsp vinaigrette (2pt).
