    Monfongo is made by mashing tostones (twice fried plantains) w/ garlic, olive oil,& chicarrones or bacon. 3 green plantains 1 tablespoon crushed garlic 1 tablespoon olive oil ½ lb. chicharrón or cooked bacon (crumbled) Vegetable oil for frying Make tostones mix w/ garlic olive oil & chicharron or bacon. Mash tostones, few at a time in the pilon, add garlic mixture & salt if needed. Form balls until mixture is used up. Serve w/ fried pork,fried onions, soup, or as side dish!

Sancocho- OK here is a recipe for a typical 'comfort' food in Puerto Rico Sancocho.
