Lazy Sunday Casserole. Mmm! Mainly sausage, potatoes, veggies, italian herbs, balsamic vinegar. Roast veggies 15 minutes, then add sausage and roast for no more than 15 additional minutes.

Luscious fruit and cheese...

Lemon herb chicken ring. I added half a cup of sour cream to the mixture because it was pretty dry. I highly recommend cooking the bell pepper before adding to the mixture. They dominated the chicken and cheese. Next time I will add one more vegetable to it as well, like spinach leaves. However, it is definitely a keeper and my husband loved it.

Hopefully this will help keep fruit and veggies from going bad too early. Smart things here. I have practiced many of these most of my life. I will add Tomatoes. I do not refrigerate them ever. I have a hanging basket in the kitchen for my tomatoes and if I cut it I eat the entire tomato then and there. They act of chilling a whole or cut tomato sucks the flavor away immediately.
