The broth for beef phở is made by simmering different cuts of beef and oxtails with charred onion and ginger and sweet spices such as Saigon cinnamon, star anise, black cardamom, coriander seed, fennel seed, and clove.
Carrot Rice - fragrant basmati rice sauteed with carrots, onions, fresh ginger, peanuts, and cilantro. I used brown basmati rice and also used both peanuts and cashews. I also skipped the cilantro. Fragrant and a nice change from plain rice.
