Looks so good - avocado salad. I can eat Hass Avacados everyday...they taste buttery and melt in my mouth. I always take 1 to the jazz fest (chilled in the cooler) and eat them with a little Tobasco, lime and a little sea salt while chillin to the music of South Floridas trendy jazz musicians!
3 T freshlime juice 2 T olive oil 1 T red wine vinegar 1 tsp granulated sugar ¼ tsp kosher salt ¼ tsp freshly ground black pepper 2 medium cucumbers, peeled and chopped 2 cups cherry tomatoes 1 large avocados, pitted and chopped ¼ cup crumbled feta cheese 1. Prepare dressing: Whisk together lime juice, red wine vinegar, olive oil, sugar, salt and pepper in a small bowl. Set aside. 2. Combine cucumbers, tomatoes and avocado in a large bowl. Toss with dressing and feta cheese. Chill until serving.
