Ingredients:
• 8 oz pasta of choice **can sub GF pasta
• 4 cups chopped romaine lettuce
• 1/3 cup finely diced red onion
• 1/2-3/4 cup caesar dressing (i used Primal Kitchen brand which is dairy free but not vegan so be sure to choose a vegan one if you need to!)
homemade crispy chickpeas: (or substitute for store-bought)
• 1 can chickpeas, drained & rinsed
• 1 tbsp olive oil
homemade sourdough croutons: (or substitute for 2 cups of store-bought)
• 2 large slices sourdough, cut into 3/4 inch cubes **substitute your favorite GF bread
