1 Garlic clove
1 Orange, Zest and juice of
1 Oregano, fresh
2 Shallot
3 lbs Tomatoes, large
1 bunch Watercress


1 Capers
1 Lemon juice, fresh
1 Olives, pitted

Baking & Spices

1 Kosher salt
1 Paprika, smoked
1 Red pepper flakes
1 Sea salt and freshly ground black pepper, Flaky

Oils & Vinegars

1 Olive oil
1 Olive oil plus more
2 Vegetable oil

Saute onions in 4 tablespoons butter over high heat. Cook for 5 to 7 minutes, or until dark and caramelized. Reduce heat to simmer and pour in cream. Cook for 3 to 5 minutes, or until reduced by half. Stir in blue cheese until melted. Serve steaks on generous portion of sauce.
