I couldn't get the okra done in the oven, so I took it out early and fried it in half olive oil and half butter to finish it off.

Oven Fried Okra - Recipe adapted from Cooking Light - Ingredients: 1 1/2 cups plain breadcrumbs 3/4 teaspoon kosher salt, divided 1/2 teaspoon freshly ground black pepper 1/4 teaspoon paprika 1/2 cup fat-free buttermilk 1 large egg, lightly beaten 1 pound fresh okra pods, trimmed and cut into 3/4-inch slices (about 3 cups) (See comments for directions)
