Creamy Garlic Spaghetti Squash · 1 medium/large spaghetti squash, cooked and shredded · 2 shallots, diced · 2 garlic cloves, minced · ¾ to 1 cup low sodium chicken broth · ¼ to 1/3 cup fat free half and half · ½ cup shredded Parmesan cheese · 2 T fresh parsley (you can also use dried if you have it; 1 T) · Salt and Pepper to taste
2 large potatoes, scrubbed 3 Tbsp olive oil 1 Tbsp Italian Seasoning 1 tsp salt 4 Tbsp Parmesan cheese Slice potatoes into very thin slices (1/4 inch). big ziploc bag to coat the potatoes. Toss potatoes with olive oil, Italian seasoning and salt in a ziplock bag to coat. Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown.
