To keep potatoes from turning brown, after peeling immediately place them into acidulated water. Can be made 1 day in advance. Fill a large bowl with enough water to cover potatoes and squeeze 2 lemons into water.
Soak apple slices for 5 minutes in a solution of 1 cup water and 1 tablespoon lemon juice. Drain and store in an airtight container in the refrigerator. Apples will stay crispy and fresh all week. Great for lunches and after school snacks. **Update: 2 Tbsp. per 1 c. works better.
sounds divine! Slice potatoes (2lg) into very thin slices (1/4 inch). Toss potatoes in (3Tbsp) olive oil, Italian seasoning (1tbsp) and salt (1tsp) in a ziplock bag to coat. Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.
When serving a crowd, cut a circle in the center (place a small bowl on the cake and trace around it). Then cut the outer ring into slices. You'll have nice square pieces that fit on a plate, instead of long wedges that drop off the edge. You can cut the small round middle into pieces too!

Your onions will begin to grow ...We just use kitchen scissors to cut what we need for meals. I periodically empty out the water, rinse the roots off and give them fresh water.
