      Tasty Kitchen Blog: Enfrijoladas. I thought while making these, "this isn't worth it." They are a tad bit messy...but holy moly. SO worth it. Every cheesy bite. I served with sour cream ,lettuce, and tomatoes. I also stirred some hot salsa into the beans. I sprinkled corn on top before baking. Total winner.
