Zucchini Chips These are good--and I've done them with squash too! I slice them thin, dip in egg/milk mixture then roll in original flavored bread crumbs with panko. Salt, pepper, paprika and spray the top with olive oil cooking spray. Bake at 350 until brown and crisp. We like them dipped in Ranch dressing, but tonight I'm going to mix up some "fake" Cane's sauce! Zucchini Corn Pancakes Ingredients: 4 large organic eggs, beaten 1/4 cup organic olive oil 2 tsp sea salt 1/2 tsp ground pepper 1 tsp dried basil 1 tsp dried organic oregano 3 cups grated organic zucchini (about one large zucchini) 1 cup fresh organic/non-gmo sweet corn off the cob or frozen corn; 1 cup mozzarella organic cheese (or your favorite cheese) 1 3/4 cups brown rice flour
Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft.
