This is a great rice and chicken recipe that doesn't include using a "cream of" soup.  I didn't even add the heavy cream at the end.  Put it all together in the baking dish, covered and put it in the oven for about and hour, maybe a bit more and sprinkled some cheese on at the end.  Great way to use leftover chicken!
