These pancakes work even better if you make the batter a day ahead and chill it over night. Just whisk to combine again before cooking. We used an individual crepe pan, but you can make one twelve-inch pancake in a cast-iron skillet and serve it cut into wedges.
This was the easiest and most impressive Christmas morning meal--a new tradition. I would halve the butter and use 2 tablespoons, but we aren't huge butter people. We sprinkled the top with fresh lemon juice and powdered sugar and everyone LOVED! This makes 4 generous portions, because who wants to skimp on Christmas?
Puffy German Pancake (The Rise of the Swamp Monster) - Mine didn't really rise that well and it pretty much tasted like a watered down egg omelet with no seasoning. Very bland and tasteless. So much so that even powdered sugar and syrup couldn't save it. I will have to investigate my Yorkshire Pudding recipe next to see if it really is way better like everyone says.
Delicious, puffy pancakes cooked in a skillet and topped with a sweet dose of caramelized apples. My family LOVES IT!
