Zucchini, Banana, and Flaxseed Muffins - Martha Stewart Recipes (made vegan: used coconut milk, 1/4 c applesauce w/additional 1/2 tsp baking powder instead of the egg, and used a mix of spelt and brown rice flours instead of all-purpose flour ... came out moist and delicious). also used 1/2 c of brown sugar.
Zucchini, Banana, and Flaxseed Muffins...very tasty...I used Whole Wheat pastry flour for 3/4 of the flour, then regular white for 1 cup, makes very large muffins if you stick to the 12 muffin portion. Next time I may do some mini muffins for my toddler!!! Very good.
chocolate zucchini muffins, I used real eggs, wheat flour, and a banana instead of applesauce. They were yummy.
