Mini Ginger-Almond Cheesecakes

Vegetarian • 15 mins to prepare • Makes 10

Baking & Spices

1/2 tsp Almond extract, pure
1/2 cup Confectioners' sugar
3 tbsp Granulated sugar
1/4 tsp Salt, coarse

Nuts & Seeds

2 tbsp Almonds

1 1/2 cups Gingersnap crumbs

    Bite-Size Desserts ~ Mini Ginger Cheesecakes via Martha Stewart. No fancy pans are required to make these mini cheesecakes: they're made in cupcake tins. Plus, only the gingersnap cookie crumb crust is baked, so the filling simply needs to be chilled. Top with a bit of crystalized ginger or almonds. Make a graham cracker crust, use lemon extract and top with candied lemon peel. You also could use chocolate wafer cookies for the crust and top with shaved chocolate.
