1 four-inch piece English cucumber
2 Garlic cloves
1 thick one-inch-thick slice Green bell pepper
2 lbs Tomatoes, ripe

Baking & Spices

2 Salt and freshly ground pepper, Coarse

Oils & Vinegars

1 cup Olive oil, extra-virgin
2 tsp Red-wine vinegar
1 tsp Sherry vinegar

Bread & Baked Goods

2 cups Crustless day-old bread
1 cup Rustic bread

    Traditional Gazpacho - The quintessential ingredients are all here: tomatoes, leftover bread, garlic, and a hint of sherry vinegar. This traditional Spanish cold tomato soup is thickened with day-old bread soaked in water. Puree the bread with ripe tomatoes, cucumber, green bell pepper, red-wine vinegar, sherry vinegar, and extra-virgin olive oil, and garnish each serving of gazpacho with homemade croutons.
