    Roasted Salmon with White-Wine Sauce Recipe It's a nice wine sauce but for a little variety you could add a tsp or so of Dijon Mustard or use a bit of Rice Wine or Champagne Vinegar to cut the richness of the sauce a bit. Also I would prefer fresh Dill or Tarragon with this dish instead of the Chives. With fish I like to use White Pepper instead of Black so the pepper doesn't stand out but also because I like how White Pepper seems to bring out the flavors in foods.
