Chicken & Avocado Enchiladas {Gimme Some Oven}--YUM! Especially the sauce! I food processored the peppers and onions into fine pieces. Then I boiled the chicken (only two breasts). When it was done, I shredded it and threw it in a skillet with the pepper/onion combo. Added two cans of pinto beans. Sprinkled everything with some cumin, chili powder, salt & pepper and cooked until tender. Next time I'll cover it before cooking--they got too tough.
