This Tuna is not seared. It's actually cooked in the marinade and the natural acids found in limes and lemons. A nice tuna steak was placed in a freezer bag with the juice of one lemon and a lime, garlic olive oil, fresh grated ginger, chilli flakes and a little brown sugar. The piece of Tuna was then massaged in the bag, and left in the fridge for at least 6 hours. Then it was sliced, and plated with some coriander, cherry tomatoes and drizzled with some of the leftover marinade. Delicious!
