      Lemon-Cardamom Blintzes w/ Blackberry Sauce (makes about 12) - CREPES: 6 eggs, 6 tbsps coconut flour, ½ cup unsweetened almond milk, ½ cup club soda, 6 tbsps melted butter / oil, 1 tbsp honey (optional), 1 tsp vanilla extract, pinch of salt. FILLING: 12 oz farmer's cheese, 4 oz cream cheese / cottage cheese / ricotta, 1 tbsp melted butter, 1 tbsp honey, finely grated zest of 1 lemon, 1 tbsp lemon juice, 1 tsp vanilla extract, I added a tsp of Penzey's baking spice; I think ½ tsp each of cinnamon & cardamom would be a good substitute. SAUCE: 1 cup blackberries, honey [to taste], Xantham gum [optional, if you like it thicker].
