CARNITAS TAMALE PIE  2/3 cup all-purpose flour  1/2 cup yellow corn meal  3 tablespoons granulated sugar  1 tablespoon baking powder  1/4 teaspoon salt  2 tablespoons vegetable oil  1 can diced green chiles  1/3cup milk  1 egg  1 can cream corn  2-3 cups leftover carnitas  1 cup enchilada sauce  1 cup shredded white cheese (Jack, White Cheddar, Pepperjack, etc.)

This is one of the first pies I made as a new bride. Looking through an issue of Southern Living magazine, my husband remarked that he always liked chess pie. He says nice things about this pie, so I've kept it in my tried and true file. I've cut the sugar by one-fourth, but it's still plenty sweet. I use whole milk buttermilk when I can find it.

Mini Apple Pies. Mix the apples with: 12 tablespoons of flour, 1 1/2c of sugar, 4 heaping teaspoons of cinnamon, 1/4-1/2 teaspoon of nutmeg (depending on how much you like nutmeg...you could also leave it out)- You will also need: 4 tablespoons of chilled butter cut into 24 equal portions.  -two boxes of pilsbury pie crusts (four chilled NOT frozen crusts)
