    SOUTHWEST QUINOA SALAD Ingredients 1 cup cooked quinoa 3 tablespoons extra virgin olive oil 2 tablespoons fresh lime juice 1 teaspoon red wine vinegar 1/2 teaspoon ground cumin 8 green onions, chopped 1 red bell pepper, seeded 1/4 cup chopped fresh cilantro (my store was out so I used cilantro in a tube - great substitute) 1 cup corn (I used frozen corn kernels, thawed) 2 (15 ounce) can black beans, drained Salt and Pepper to taste (5p+ per cup w/o avocado)

Southwest salad with creamy cilantro dressing. Just made this and it's the best salad I've ever had!!! Love the dressing!

Quiona salad- I didn't have black beans, corn or the ingredients for the dressing. I used different color peppers, red onions, red tomato, and a raspberry viganette. Want to add avacado next time.
