Pure olive oil spray, 4 minced scallions (or green onions), 2 shredded carrots, 1/2 minced red bell pepper, 1/2 shredded zucchini, 14 egg whites, 4 whole eggs, 1/2 tsp basil, 1/4 tsp oregano, dash of sea salt and pepper. Fill 12-muffin tin 2/3 full of vegetables and 1/3 cup of eggs. Bake at 375 for 30 minutes. Muffins will stay for 1 week refrigerated, or you can freeze them for later (be sure to thaw overnight in refrigerator before eating).

Two of my favorite things--- sunny side up eggs cooked in Avocado slices; healthy breakfast idea
baked eggs in avocado. nom nom. 1. Take a thick slice of avocado (leave the skin on) and remove the nut, hollowing a little extra room into the space left in the middle (I used a shot glass as a kind of cookie cutter). 2.Place an avocado slice in a lightly oiled pan and crack in an egg then stick in the oven at 350 and let cook for a couple of minutes (cover with foil if you don't like your eggs a little runny). 3. Finish by seasoning as you like – I just used salt and pepper.
Here's how you do it: 1. Scoconut oil, or butter. 3. Cut a larger hole in the middle of each avocado slice (with a cookie cutter or knife). 4. Place avocado slice in the pan, and crack an egg into the middle. 5. Sea salt and pepper the top, and add parmesan cheese if desired. 6. Cover the pan and let it saute until the egg is "done." You can make guacamole with your extra avocado pieces! Or, you can hard boil some eggs, and repeat the egg-avo combo for lunch or dinner in avocado-egg-salad.

Spike Seasoning (optional, if you have food allergies or don't have Spike, use any type of seasoning blend that's good with eggs.) 1-2 cups grated low fat cheese (I like sharp cheddar or a blend of cheddar/Jack cheese, use less cheese if using meat) Optional, but highly recommended, 3 green onions diced small. Optional: chopped veggies such as blanched broccoli, red pepper, zucchini, mushrooms, etc. (Using veggies will reduce the fat content) Optional: diced Canadian bacon, lean ham, or crumbled cooked turkey sausage Preheat oven to 375 F. Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray. In the bottom of the muffin cups layer diced meat, if using, vegetables, if using, cheese and green onions. You want the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients. Break eggs into large measuring bowl with pour spout, add Spike, and beat well. (I used to add a bit of half and half or milk, but lately I like the way they turn out without it.) Pour egg into each muffin cup until it is 3/4 full. I like to stir slightly with a fork. Bake 25-35 minutes until muffins have risen and are slightly browned and set. Muffins will keep more than a week in the refrigerator. Egg muffins can be frozen and reheated, but I like them best when they are just refrigerated. For best results, thaw in refrigerator before reheating. Microwave on high about 2 minutes to reheat.

Mexican Stuffed Peppers - These were awesome! But with a few edits. Instead of stuffing the peppers, chop half a yellow and half a red bell pepper. Decrease the cilantro to 1/3 cup loosely packed, increase the rice to 1.5 cups (I mixed white and brown). I used a reduced fat mex blend of cheese. It doesn't need sour cream.
