Egg Puffies, servings: 3 Ingredients: • 9 eggs • 1/2 cup onions • ½-1 cup fresh spinach • 1/2 cup chopped mushrooms • 1/2 cup chopped red bell pepper • 4 strips of bacon Directions: oven at 350.Spray muffin tin with olive oil nonstick spray.Mix eggs together in a bowl & scramble.Add remaining ingredients and mix together.
