    It would be unless you have an extended family like mine that get together on the 4th. One bro in law and kids hate onions. Another sister and her kids hate beets. And one doesn't believe in mixing fruit and vegetables in salads. Sigh.

I LOVE BEETS!!!! honestly though, I really do. My fav is just to simply roast them in the oven with a little salt & pepper

Beet & Orange Salad - winged it with the dressing, added arugula, omitted bleu cheese. wonderful.

Tried this quinoa salad and it was awesome! I used white quinoa because I had it on hand. Great flavor, lots of protein and refrigerates well :)
