STEAK FAJITA BOWL

Serving Size: 2 servings
400g tenderloin beef
- •2 tbsp olive oil
- •1 tsp Tex-Mex seasoning
- •½ red bell pepper, sliced
- •½ yellow bell pepper, sliced
- •½ red onion, sliced
- •½ head lettuce, chopped
- •1 cup corn
- •1 cup cooked rice
- •½ cup shredded cheese
- •¼ cup salsa
- •¼ cup sour cream
1 lime, cut into quarters
In a bowl, mix beef, oil & Tex-mex seasoning. Set aside to marinate for 30 minutes.
Heat the griddle or skillet on high heat and sear the beef for about 3-4 minutes per side. Transfer to a plate and allow to cool for 5 minutes before slicing. Cook vegetables beside the beef (if using a griddle) or in a skillet stirring occasionally for 5 minutes then set aside.
To assemble the bowl, add lettuce then top with the beef, sautéed vegetables, corn, rice and cheese. Add sour cream, salsa and a squeeze of lime juice.
