Blue Cheese Guacamole  2 large avocados, cut into small pieces  1 lime, juice  1/4 cup blue cheese at room temperature, crumbled  1 jalapeno pepper, finely diced  1 roma/plum tomato, seeded and diced  1/4 cup red onion, diced  1 tablespoon cilantro, chopped  1/2 teaspoon cumin (toasted and ground)  salt and pepper to taste

Avocado Dip    2 avocados; halved, seeded and scooped  1 1/2 cups sour cream  1 teaspoon cumin  1/2 teaspoon Sriracha or other hot sauce  3/4 cup chunky salsa  3/4 cup Sargento shredded mild cheddar cheese, divided use  3/4 cup chopped tomato; divided use  salt and pepper to taste  fresh cilantro for garnish

California Avocado Dip. (I modified by doubling the recipe, omitting the jalapenos, and adding 1 pkg. crumbled feta cheese and 1 cup nonfat Greek yogurt.  It was FABULOUS, healthy, and a hit with everyone!)
