Mussels in White Wine Sauce with Onions Tomatoes : 1 onion, chopped 4 garlic cloves, chopped 3 Tbsp butter 2 1/2 lb. mussels, well scrubbed and debearded 1/2 cup white wine 3-5 small tomatoes, chopped 1/2 bay leaf freshly ground pepper, to taste 1/4 cup parsley, chopped
5 lbs. chunked red potatoes, 4 cloves minced garlic, 1 roughly chopped large onion, 2 green &. 2 red roughly chopped peppers, 1/4 c. olive oil, 1/2 stick melted butter, 1 t. seasoned salt, 1/2 t. cayenne pepper, kosher salt and f.g. black pepper. Preheat oven to 425. Pour into 2 baking sheets. Bake 20-25 min, shaking pan twice. Raise heat to 500. Bake 15-20 min, tossing twice. Sprinkle with more S & P before serving.
