Sugar Cookie Lemon Tarts...something like a bite size lemon meringue pie. I used a clean bottle cap instead of my thumb to press the dough into the mini-muffin pans.

Lemon Meringue Cups - Preheat oven to 350˚ F. Mix 1c graham crackers w/4tbsp melted butter & 1/3c sugar, stir to combine. Press crumbs into bottoms of jars (makes 6 servings in 1/2 pint mason jars). Bake about 10 min or until lightly browned. Follow instructions on a 3oz "cook and serve" box of lemon pudding. Pour pudding over the crusts in the jars. Beat 4 egg whites and 1/2c of sugar, until peaks form. Scoop over pudding and bake about 10 min, until meringue is browned. Chill 4 hrs…
