Watermelon Jelly. I used 8 cups watermelon, 6 tablespoon and 1.5tsp no/low sugar pectin, 6.5 cups sugar, 6 tbsp lime juice, 2 tbsp lemon juice. Added pectin and some sugar. Heated to rapid boil then added the rest of the sugar. Rapid boil for about 3 minutes....

Watermelon Jelly Yield: Makes 2 to 2 pints Ingredients 6 cups pureed watermelon (remove any seeds prior to pureeing) 5 cups white sugar cup bottled lemon juice 1 packet powdered pectin

Watermelon Jelly: 2 cups seeded, diced watermelon 3-1/2 cups sugar 3 tablespoons fresh lemon juice 1 package powdered fruit pectin
