Avocado salad in an avocado half. Served in Avocado shell. All you need is 2 ripe avocados, 1 can of tuna, 1 small can of mixed vegetables (or cooked and diced carrots, green beans, peas and potatoes), 2 TBSP of mayonnaise, the juice of one lime, salt, pepper and a dash of oregano.
Pesto grilled shrimp.. pulse in blender 1/2 C packed fresh basil, 1 clove garlic, 1Tbsp pine nuts, 2 Tbsp Olive oil, 2 Tbsp parmesan cheese, 1 Tbsp lemon juice, salt & pepper. Marinade 1 pound pealed and de-veined shrimp for 20 min in refrigerator. Grill med. high 2-3 min.
