L'shanah tovah - Happy New Year to all who are celebrating. From the kitchen of One Perfect Bite...There is no need to call the ASPCA. In logger jargon, a cat-skinner is the operator of a bulldozer that is used to move felled trees from the forest floor to trucks where they are loaded and taken to a mill. It is hard, hot and dangerous work, the kind that builds an appetite and assures there will be takers for delightfully dense and pudding-like cakes such as this. In 2010, the organizers of the first-ever Great Oregon Coast Potluck-Off, challenged the community to come up with dishes that would redefine what a pot-luck dinner could be. This unique carrot cake was the winner. It was made by a team from the First Christian Church of Newport and judges were impressed by its slightly tropical flavor and the liquid frosting that formed a glaze as it was absorbed into the still warm cake. The cake is delicious and quite easy to make. While it is sweet, it is not cloying and when served warm with a dollop of cream, it really is delightful. What the cake lacks in refinement, it makes up for in flavor, and if you enjoy a good bread pudding, I think you'll like this cake. Here's how it is made. Cat-Skinner's Carrot Cake...from the kitchen of One Perfect Bite courtesy of the First Christian Church of Newport and Grant Butler of The Oregonian Ingredients: Cake 2 cups all-purpose flour 2 teaspoons ground cinnamon 2 teaspoons baking soda 1/2 teaspoon salt 3 eggs 3/4 cup buttermilk 3/4 cup vegetable oil 2 teaspoons vanilla 2 cups granulated sugar 2 cups shredded or finely chopped carrots 1 8-ounce can crushed pineapple, drained 1 cup flaked sweetened coconut 1 cup chopped walnuts Frosting 1 cup granulated sugar 1/2 cup buttermilk 1/2 teaspoon baking soda 1 teaspoon light corn syrup 1/2 cup butter (1 stick) Instructions: 1) Preheat oven to 350 degrees F. Lightly butter and flour a 9-by-13-inch baking pan. 2) To make cake: Sift flour, cinnamon, baking soda and salt together in a medium bowl. In a large bowl, beat eggs with a hand mixer or whisk until they are smooth. Add buttermilk, oil, vanilla and sugar and mix until sugar has dissolved and ingredients are fully incorporated. Add dry ingredients and continue beating until smooth, about 1 minute. Stir in carrots, pineapple, coconut and walnuts. Pour batter into the prepared pan. Bake for 45 to 55 minutes. 3) To make frosting: Combine sugar, buttermilk, baking soda, corn syrup and butter in a medium saucepan. Bring to boil over medium-high heat and boil for 5 minutes, stirring occasionally. Pour hot frosting evenly over warm cake, allowing frosting to soak in. Yield: 16 servings. One Perfect Bite: Perfect Chocolate Cake - It was soon clear that if I wanted a whipped cream cake, I'd have to make it for myself. Fortunately, McCall's Cookbook came to my rescue with a recipe for what they called The Perfect Chocolate Cake. It was pretty aptly named. The cake was light and rich and made with cocoa, whipped cream and lots of chocolate.
Mac's birthday cake. Update! I did make this and it was really good. Its not a quick recipe but for bdays you have to pull out all the stops. The frosting takes patience and the cake does require refrigeration. Mac said he wanted chocolate cake with chocolate frosting and he got it. Happy 5th!
Searching for the perfect chocolate cake. My Review: It might or might not be the perfect chocolate cake to you, but this is perfect for my purposes. It's so moist that even after I cut into it, it was still good a week later. The flavor is pleasant but mild chocolate flavor. It's not very rich or sweet, but that makes it a good pairing for a decadent frosting. I only made the cake, so I can't comment on the filling or frosting from this recipe.

I'm not an extravagant person. I've known for years that the dream of the house on the hill is far sweeter than its acquisition and I'll never forget the lessons learned in the Italian kitchen of my childhood. While not an asetic, Mrs S. really believed that men were as rich as the things they could live without and she practiced what she preached. Some of it must have rubbed off on me. My consumer gene is quieter than most, but I occasionally stumble on something that awakens the shopper in me. That happened this morning as I was browsing through the wonderfully shameless first edition of Ruth Reichl's new venture, Gilt Taste. It's a high end catalog that features hard-to-find and artisanal food, as well as some wonderful recipes and great food writing. I was a bit poorer by the time I finished my breakfast coffee and could envision the look of disapproval Mrs. S would have given me. It also set me to thinking about the other lessons I learned while sitting at her table. She was a wonderful cook and had a natural gift for combining unusual ingredients in a way that would make a singular and scrumptious dish. One that I remembered was a frittata made with cheese and green beans. I had never been able to duplicate it, but I recently came across a very similar dish in the Los Angeles Times and decided to try it for our dinner tonight. Mrs. S. would have been pleased and I think that those of you who try this will find it very interesting. It is fairly simple to do and would make a wonderful entree for lunch or a light supper. If you are looking for meatless entrees I really think you'll like this. Here's the recipe. From the kitchen of One Perfect Bite...This sweet potato bread comes from Cooking Light magazine. It is a riff on the ubiquitous pumpkin breads that are impossible to avoid at this time of year. This streusel topped loaf is pleasant enough, and if you are watching fat and calorie intake you might want to give this recipe a try. There is, however, a problem you should be aware of. The bread will be dry if the flour is not carefully measured. This recipe is definitely one in which you want to use the fluff, spoon and level technique for measuring your dry ingredients. If you scoop flour directly into a measuring cup, you will have a doorstop rather than a sweet bread. The loaf has a lovely texture and the streusel topping, which gives the bread real eye appeal, is also delicious. The bread itself is borderline bland and I think it needs some orange zest or more cinnamon and nutmeg to boost its flavor. I am posting the recipe as it was originally published because the changes I've suggested might not be to your taste. Here's how the bread is made. Sweet Potato Bread with Streusel...from the kitchen of One Perfect Bite courtesy of Cooking Light magazine Ingredients: 1 large sweet potato (about 12 ounces) 2 teaspoons butter 1/3 cup chopped pecans 2 tablespoons dark brown sugar 1 1/2 cups all-purpose flour 1/2 cup whole wheat flour 3/4 cup packed dark brown sugar 2 teaspoons baking powder 1 teaspoon ground cinnamon 3/4 teaspoon salt 1/4 teaspoon ground nutmeg 2/3 cup fresh orange juice 3 tablespoons vegetable oil 1 large egg, lightly beaten Cooking spray Directions: 1) Preheat oven to 350 degrees F. 2) Pierce potato with a fork; place on a paper towel in microwave oven. Microwave at high 7 minutes, turning after 4 minutes. Wrap potato in paper towel; let stand 5 minutes. Peel potato; mash to measure 1 cup. 3) Place butter in a small microwave-safe bowl. Microwave at medium 20 seconds or until soft. Stir in pecans and 2 tablespoons sugar. Remove from oven and set aside. 4) Lightly spoon flours into dry measuring cups; level with a knife. Combine both flours with sugar, baking powder, cinnamon, salt and nutmeg in a large bowl and whisk to combine. Add mashed sweet potato, juice, oil, and egg, stirring until well blended. 5) Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray. Drop pecan mixture by spoonfuls over top of loaf and gently press into batter. 6) Bake for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan 5 minutes on a wire rack. Remove from pan and cool completely on a wire rack before serving. Yield: 1 loaf to serve 8 to 12. From the kitchen of One Perfect Bite...Our weather has warmed considerably, but we've had spells of heavy rain in the morning and late afternoon. The weather, coupled with some very busy days, has kept soup on my menus. This lovely carrot-ginger version comes from a Family Circle feature in which actors share what they are currently cooking. The soup is light and flavorful and very easy to make. It is not substantial enough to serve as a stand-alone meal, but with the addition of a salad or sandwich you'll have the makings for a mighty fine supper. I do hope you'll give Ali Larten's recipe a try. There is nothing here not to like. Here is how this simple and economical soup is made. Carrot Ginger Soup...from the kitchen of One Perfect Bite courtesy of Family Circle magazine Ingredients: 2 tablespoons extra-virgin olive oil 1/2 cup chopped white onion 4 cups chopped carrots (peeled and cut into 1/2-inch pieces) 4 cups vegetable broth 1 cup orange juice 1 tablespoon plus 2 tsp finely grated and peeled fresh ginger 1 tablespoon lemon juice 1 can (14 oz) coconut milk 1/2 teaspoon salt 1/8 teaspoon black pepper Directions: 1) Heat olive oil in a large saucepan over medium heat. Add onion and saute until translucent, about 5 minutes. 2) Add carrots, broth, orange juice, ginger and lemon juice; bring to a boil. Reduce heat and simmer, covered, until carrots are tender, about 20 minutes. 3) Remove saucepan from heat. Puree soup with an immersion blender or food processor until very smooth. Return soup to saucepan and stir in coconut milk, salt and pepper. Reheat over medium heat until hot and serve. Yield: 6 servings. Arugula and Carrot Salad with Walnuts and Cheese
From the kitchen of One Perfect Bite...I'll wager you can guess what my resolution for the New Year is. Yup! I'm joining the ranks of the rabbit people until I've atoned for the dietary excesses of the holiday. It, unfortunately, is going to take a while, so portion and carb control are going to be my mantra for the next couple of months. I promise not to bore you with my progress, or lack thereof, and I won't make the assumption that you, too are watching your weight. Mums the word! My plan is not to mention this again until I get were I want to go and that's a lot of pounds away. There will be before and after pictures when I hit the finish line. Salads like this one will make the journey a bit easier. I love the play of peppery arugula with the sweet carrots in this salad and the walnut vinaigrette used to coat the greens walnut is inspired. The recipe was develop by Martha Rose Shulman for The New York Times and I think you will love it as much as I do. Here is how the salad and its dressing are made. Arugula and Carrot Salad with Walnuts and Cheese...from the kitchen of One Perfect Bite courtesy of Martha Rose Shulman via the New York Times Ingredients: Salad 4 cups baby arugula 2 cups grated carrots 2 tablespoons broken walnuts 1/4 cup grated Parmesan or crumbled blue cheese 1 tablespoon finely chopped fresh tarragon Dressing 1 tablespoon fresh lemon juice 1 tablespoon sherry vinegar 1 teaspoon balsamic vinegar Salt to taste 1 teaspoon Dijon mustard 1 small garlic clove, pureed or finely minced (optional) 1/4 cup extra virgin olive oil 2 tablespoons walnut oil Directions: 1) Combine arugula, carrots, walnuts, cheese and tarragon in a salad bowl. 2) In a small bowl or measuring cup, combine lemon juice, vinegars, salt and mustard. Whisk together, and add garlic. Whisk in e oils. 3) Shortly before serving, toss the salad with dressing. Yield: four to six servings. Cook's note: If you are entertaining, salad ingredients can be combined several hours before serving and refrigerated in a covered bowl. Dressing will also hold for several hours, in or out of refrigerator. From the kitchen of One Perfect Bite...These moist and chewy cookies are hard to resist if you enjoy apple pie. They are packed with fruit and nuts and flavored with the same spices as America's favorite pie. They are wonderfully fragrant and even smell like apple pie as they bake. The recipe first appeared on the blog The Naptime Chef and it has also been featured on food52. I'm not sure the cookies will be a favorite of the cookie-jar set, but if you enjoy an adult biscuit with your coffee or tea, these are definitely worth trying. The cookies are delicious and simple to make, but I suspect you'll need to bake them for a few minutes longer than is suggested in the recipe. My cookies needed a full 15 minutes to set and brown. You might also want to cutback on the amount of cloves used in the recipe. I used the full amount for my first batch of cookies and thought it was a bit overpowering. I cut the measure in half for the next batch and was much happier with the results. I also added mace and ginger to the dry ingredients to bolster the reduced quantity of cloves. I suspect that a commercial pie spice mixture would also work well here. This is a homely cookie that makes no pretense to be something it is not, but I can promise you that its flavor will trump its gnarly appearance. I hope you'll give the recipe a try. Pie-Spiced Apple Cookies...from the kitchen of One Perfect Bite courtesy of Katie Sanford as featured on The Naptime Chef and food52 Ingredients: 1 cup raisins 1/2 cup shortening 1-1/3 cups dark brown sugar 1 egg 1/4 cup whole milk 2-1/4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1/2 teaspoon ground nutmeg 1/2 teaspoon salt 1 cup chopped walnuts 1 cup unpeeled apple, finely chopped Directions: 1) Preheat oven to 350 degrees F. Line cookie or sheet cake pans with parchment paper. 2) Place raisins in a small saucepan. Cover with water and bring to a boil. Remove from heat and let sit for 5 minutes. Drain and set aside. 3) Combine shortening and brown sugar in bowl of an electric stand mixer fitted with a paddle attachment. Beat until fully combined. Beat in egg and milk. sugar until full combined. Add egg and milk and mix ingredients well. 4) Whisk flour, soda, cinnamon, cloves, nutmeg and salt together in another bowl. With mixer on low speed, slowly add dry ingredients, scraping bowl necessary, until everything is fully combined. 5) Stir chopped apple, raisins and walnuts into batter with a wooden spoon. 6) Drop cookies by rounded teaspoonfuls about 2-inches apart onto cookie sheets. Press tops of cookies down slightly with two fingers to flatten slightly. 7) Bake for 12-14 minutes or until cookies hold their shape and edges are slightly browned. Yield: 3 dozen cookies. From the kitchen of One Perfect Bite...I finally got around to giving this Ina Garten recipe a try. It has been around for a while now, but for one reason or another, it has not been widely circulated on food blogs. Because the cakes are so delicious, I thought those of you who have not yet tried them might also be interested in the recipe. If you are looking for a side dish that you can use as a substitute for potatoes, you need look no further. These are wonderful. They must be mixed several hours before they can be fried and they should be eaten as soon as they come from the skillet, but they are so good you will consider those constraints a minor irritation. I served these rice cakes for brunch today and they were really well-received. They are also wonderful with plained grilled meat and poultry. I know that those of you who try the cakes will enjoy them. Here is Ina's recipe. Chive Risotto Cakes...from the kitchen of One Perfect Bite courtesy of Ina Garten Ingredients: Kosher salt 1 cup uncooked Arborio rice 1/2 cup Greek yogurt 2 extra-large eggs 3 tablespoons minced fresh chives 1 1/2 cups grated Italian fontina cheese (5 ounces) 1/2 teaspoon freshly ground black pepper 3/4 cup panko (Japanese dried bread flakes) Good olive oil Directions: 1) Bring a large (4-quart) pot of water to a boil over medium-low heat and add 1/2 tablespoon salt and the Arborio rice. Cook, stirring occasionally, for 20 minutes. The grains of rice will be quite soft. Drain the rice in a sieve and run under cold water until cool. Drain well. 2) Meanwhile, whisk together the yogurt, eggs, chives, fontina, 1 1/4 teaspoons of salt, and the pepper in a medium bowl. Add the cooled rice and mix well. Cover with plastic wrap and refrigerate for 2 hours or overnight, until firm. 3) When ready to cook, preheat the oven to 250 degrees F. 4) Spread the panko in a shallow dish. Heat 3 tablespoons of olive oil in a large skillet over medium-low heat. Form balls of the rice mixture using a standard (2 1/4-inch) ice-cream scoop or a large spoon. Pat the balls into patties 3 inches in diameter and 3/4-inch thick. Place 4 to 6 patties in the panko, turning once to coat. Place the patties in the hot oil and cook, turning once, for about 3 minutes on each side until the risotto cakes are crisp and nicely browned. Place on a sheet pan lined with parchment paper and keep warm in the oven for up to 30 minutes. Continue cooking in batches, adding oil as necessary, until all the cakes are fried. One Perfect Bite: Florentine Schiacciata - Carnival Cake. I fell in love with this orange-flavored cake while I was in Florence. The traditional recipe calls for lard and letting the dough rise twice, but this recipe is much easier and you still get the wonderful flavor. Also--by tradition--the cake is ONLY available starting from New Year's Day until the last day of Carnivale. With the start of Lent on Ash Wednesday, you can't get it any longer.

From the kitchen of One Perfect Bite...This is a quick and easy version of Schiacciata alla Fiorentina, a flat cake served by Florentines during their extended Carnival season. The cake is flavored with orange zest and extra virgin olive oil and, while it can be made with yeast, this version is leavened with baking soda and can be assembled in about 15 minutes. It's a lovely cake. It's lighter than an American sponge cake and it has an unusual, but very pleasant, fruity flavor. It is best served for dessert and it's wonderful with a slightly sweet fortified wine. I learned to make a version of this cake in the kitchen of an Italian neighbor when I was a child. There are, literally, hundreds of recipes for this treat. I like this one because it so nicely blends the flavors of the Tuscan orange and olive groves. Be sure to use extra virgin olive oil if you decide to make this. Anything else would be too strong for a dessert cake. It is also very important to make sure the cake is completely cooked before it's removed from the oven. Test in several areas, not just in the center of the cake. This is a moist cake and will stay fresh for several days if properly wrapped and refrigerated. Oh, before I forget, schiacciata is pronounced ski-ah-CHA-ta. I'm quite sensitive to this. I was able to make the cake long before I could pronounce its name and there was a lot of good natured teasing at my expense. Here's the recipe. Florentine Schiacciata - Carnival Cake...from the kitchen of One Perfect Bite and La Cucina Italiana Ingredients: 2 eggs 2/3 cup granulated sugar 2 teaspoons finely grated orange zest 1 tablespoon orange juice 1/2 cup + 2 tablespoons extra virgin olive oil 1-1/2 cups whole milk 2-1/2 cups all-purpose flour 2 teaspoons baking powder 1/4 teaspoon salt Confectioners' sugar for dusting cake Directions: 1) Preheat oven to 375 degrees F. Line the bottom of a 9 x 9 x 2-inch pan with wax or parchment paper. Grease and flour pan. Set aside. 2) Whisk eggs, sugar, orange zest and juice in a large bowl. Combine olive oil and milk in a two cup measure. Whisk into egg mixture. Sift together flour, baking powder and salt. Fold into egg mixture until smooth. Pour into prepared pan. 3) Bake for 20 to 25 minutes, or until done. Cool on a wire rack for ten minutes before removing from pan. Invert on rack to complete cooling. Sprinkle a liberal layer of confectioners' sugar over top of cake before serving. Yield: 9 servings.
